Easy Chicken-Ham Embutido Recipe


INGREDIENTS:

  • 1 kg chicken thigh fillet, skins and excess fat removed

  • 1 pack sweet ham

  • 1/4 cup pickle relish

  • 2 pcs raw egg

  • 16 pcs soft boiled quail eggs, peeled

  • 1 pc medium head broccoli, florets separated and stem removed

  • 1/4 cup butter, softened

  • 1/2 cup queso de bola, grated

  • Salt, to taste

HOW TO COOK:

  1. Process the chicken fillets in a food processor until finely chopped.

  2. Add- in the ham and process until finely chopped.

  3. Place the mixture into a large bowl and mix- in the butter, queso de bolas, pickle relish, eggs, and 1/2 teaspoon salt and 1/4 teaspoon ground black pepper.

  4. Divide the mixture evenly into 4 parts.

  5. Cover a chopping board with foil.

  6. Place and form half of the 1 part into a flat log over the board.

  7. Place the broccoli florets and quail eggs in alternating order in the middle.

  8. Place the remaining half of the chicken mixture over broccoli and eggs.

  9. Roll the mixture into a foil log and twist ends closed.

  10. Repeat with remaining mixtures and fillings.

  11. Chill overnight or at least 4 hours.

  12. Prepare a steamer and wait to simmer.

  13. Once simmering, place logs into the through, about 45 minutes to 1 hour.

  14. Let it rest before opening.

  15. Slice immediately before serving or pan fry after steaming, if desired. Enjoy!
